The essential oil of Coriander is obtained by steam distillation of the Coriandrum sativum, L.

The coriander is native to southern Europe, North Africa and the Caucasus, although nowadays, due to its ease of cultivation, it is present all over the world, as the south of Spain, with important plantations of coriander

Annual species, herbaceous, with erect stems, smooth, cylindrical, branched at the top, reaching a variable height between 40 and 60 cm in height.
Lower leaves petiolate, pinnate, with oval segments, cuneate, upper leaves almost seated, bi or trinated with acute segments.
Flowers small, white or slightly pink, arranged in terminal umbels.

All the parts are usable, although the tender leaves and seeds are the most appreciated and very popular in gastronomy from almost all parts of the world.

In addition to the culinary use, the essence or essential oil of coriander is used both as a flavoring of liquors and digestive beverages, as in perfumery.

In herbology it is used as a stimulant, antispasmodic and stomach.
